Thai Soup and Gelato




I made Thai Chicken Soup last night.
The boys love, LOVE it.


















 
Thai Chicken Coconut Soup

To 2 litres of chicken stock
Add the grated rind of three lemons and three limes.
Set the lemons and limes aside for the gelato.

Add a grated knob of ginger.
I love ginger so I put in about three tbsp. Crazy!
Add 2 hot chilli peppers cut up.
Add a handfull of parsely or cilantro.

Bring to a boil, then reduce heat.
Reduce the broth for about 30 minutes.
Strain.
Add one can of coconut milk into your empty pot.
Turn heat on and pour the strained broth into the coconut milk.
Cut up 2 chicken breasts into bite sized pieces.
Once the broth is warmed up, add the chicken.
Cook until the chicken is just past pink.
Serve it up in yummy bowls.
You can sprinkle with more parsely and some peppers.


Lemon Lime Gelato



Squeeze the juice from the three lemons and three limes.
Measure this amount in a measuring cup.
You will need this much sugar and this much whipping cream.
Pour the juice into a saucepan with the sugar and heat
Until all the sugar has dissolved.
Let this mixture cool.
Add the cream to this mixture.
Stir until blended.
Pour into ice cube trays.
Freeze.

You've done it!
